12 Farmhouse Oatmeal Muffins

We have several oatmeal muffin recipes for you. The first, are healthy farmhouse oatmeal muffins made from buttermilk, rolled oats and whole wheat flour. Makes 12 muffins. The second recipe is another oatmeal recipe but this time with the addition of dried cranberries. Of course, if you don't have any cranberries at hand you could always substitute them with the same amount of raisins or fresh blueberries.

Farmhouse Oatmeal Muffins

Oatmeal Muffins

1 cup whole wheat flour 1 cup rolled oats 2 tsp baking powder 1/2 tsp sea salt 1/2 tsp baking soda 1/2 cup melted butter 1 cup buttermilk 1 egg, beaten

  • Instructions: In a medium-size mixing bowl, stir together the dry ingredients In a small bowl, mix together the melted butter, buttermilk, and egg; add all at once to dry ingredients

  • Stir together just until dry ingredients are moistened. Do not beat Divide mixture evenly among 12 well-buttered muffin pan cups

  • Bake at 375ºF for about 25 minutes or until nicely browned

  • Serve immediately with butter or with jam

 

Cranberry Oatmeal Muffins


Cranberries are incredibly healthy for you, and even for those who suffer from diabetes. And if you want to reduce your risk of diabetes, drink 2 glasses of cranberry juice daily. However, cranberries do have a high calorie count, so not good for those seeing weight loss. One cup of unsweetened cranberry juice will contain about 116 calories. This cranberry oatmeal muffin recipes calls for a half cup of dried cranberries which contains 169 calories. Cranberries contain mainly carbohydrates.

Cranberry Oatmeal Muffins

2 cups oatmeal

1 1/2 cups sour milk

1 teaspoon baking soda

1 tablespoon cold water

1/2 teaspoon salt

4 T honey

2 T butter, melted

1 cup almond flour

1 cup dried cranberries


Instructions

  • Put the oatmeal into a large bowl and add the sour milk, plus baking soda that has been soaked in the water

  • Add rest of ingredients

  • Mix well. Don't over mix

  • Pour into well-greased muffin pans

  • Bake in a hot oven for 20 minutes
